For the uninitiated (Heff - I'm looking in your direction), scrapple is traditionally a mush of pork scraps and trimmings combined with cornmeal and flour, and spices. The mush is formed into a semi-solid congealed loaf, and slices of the scrapple are then panfried before serving ( i like ketchup on mine). Scraps of meat left over from butchering, not used or sold elsewhere, were made into scrapple to avoid waste. Scrapple is best known as a regional Amish food of the Mid-Atlantic States (Delaware, Pennsylvania, New Jersey, and Maryland).

Well, it's not chitlins or hog maw, but we call it breakfast here in the Northeast.
I can eat just about anything if it's ground fine enough and packed with enough salt and fat! I think I can see the attraction to scrapple! But the name does not entice!
Good on ya for the scrapple, Buzz! It's similar to goetta, which is big where I live.

Then think of it as scrabble. You cut it into "tiles", fry it up and arrange it on your plate to form a breakfast. It will be a new game sensation.
IE
I had to look up goetta because I never heard of it. Another reagional delicacy from the Cincinnati area. They apprear to be very similar with goetta being oat based and scrapple being corn based. I imagine the scrapple is a little more gritty tasting than the goetta. I'll have to give it a try some time.

Damn dude I missed this and I LOVE scrapple. With apple butter. It's an East Coast thing. Looks like you got it good and crispy too.
