Colcannon Revisted
A couple of weeks ago, I made a Colcannon recipe for the Culinary Smackdown competition. You'll recall that I used red cabbage and the dish turned an unappetizing blue/purple. Well, I remade it for this weeks St. Patrick's Day office potluck. I used a bag of shredded cole slaw cabbage that had some carrots in it it too. It looked much better and was a pretty big hit at lunch. Three people asked for the recipe. I only had enough left overs for my lunch today - and it still looked (and tasted) appetizing.

Appearances everything and red cabbage can ruin the appearance. Folks just don't like to eat purple food.

I nearly forgot it was St.Patrick's Day. I'm glad you were able to use the recipe a second time and it's always nice when people eat what yu make.... unless you were truly counting on leftovers. Glad both happened for you. Have a good weekend!

Oy. St. Patty's Day. It was fun when I was younger and singler.
Good re-run. I like the stuff. I hate purple --in any form, but if I closes mah eyes, I can eat purple cabbage--tasted fine.

Nice work BK. I still don't grasp the whole "St. Patrick's Day" thing. Lots of saints. As a reformed Catholic I don't understand why this is so big. Yes, I get the Irish influence of our nation but St. Patrick was English. Do they know this? Read "How the Irish Saved Civilization" by Thomas Cahill to get a true understanding of St. Pat. The gruel looks awesome.
