I'll have to admit that I didn't really know what constituted "spring vegetables". I did a little research and came up with artichokes, cherry tomatoes and sweet peppers. There's no way the Mrs. and the monsters eat artichokes, so I chose peppers. I went with a Fiesta Stuffed Pepper and a vegetable side of Glazed Snow Peas and Carrots.
The stuffed peppers were fairly straight forward with ground beef, rice, garlic and salsa. The salsa gave them a nice Mexican flavor and I topped them with cheddar cheese. Everyone loved them.
The snow peas and carrots were a different story. I went with them because the Pudge said he liked the snow peas better than regular green beans. Turns out he doesn't like any kind of green bean. This was a microwave dish because I was up against another Soccer Sunday and I wanted something quick when I got back from the game (Goblins won 4-1). I pre-made the stuffed peppers and had the Mrs. throw them in the oven for me.
The peas and carrots were really bland even though I had a brown sugar and butter glaze on them. They actually looked good, just no flavor.
So there's another Sunday Dinner in the bag. The whole soccer-at-supper-time thing really puts a wrinkle in the meal selection. Next week is burgers and I will be camping with the Pudge and the Webelo Scouts. I'll try and take pictures of the burgers we have for dinner, but I'll guarantee they won't be much - I'm just hoping for edible.

A very nice effort even if the veggies were bland. Didn't know when we started this that we'd be running into Soccer Sunday but still pre-planning does help.

looks delish and so beautifully colourful. I've fallen off the DSS wagon but am determined to get back up for burgers.
